Pumpkin Muffins

Hey guys, I had left over pumpkin, so I created a all my own recipe, and it turned out yummy, not to sweet, so here ya go.


1 1/2 cups pumpkin
1/2 c. splenda
2 eggs
2 tsp cinnamon
1 tsp nutmeg
walnuts if desired
1/3 cup milk
1 tsp butter melted

mix all together and bake in a muffin pan on 350 until done. I would use some pam on the pan and the little paper cups if you use them, the pumpkin makes them sticky, and they tend to not want to come up.

Sugar Free Pumpkin Rolls For the Holidays

Hey there folks. Been a long time since I posted a recipe, but I started some of my Thanksgiving baking today, so here ya go.


For the cake part

3 eggs
1 cup splenda
blend together for about 5 minutes

then add in

1 cup flour
1 tsp lemon juice
2 tsp cinnamon
1 tsp nutmeg

Pour out onto a wax paper lined cookie sheet and bake at 350 degrees for 5-7 minutes until done.

Take out and roll it up in the wax paper, then wrap that will a damp towel. Place in fridge to cool and form

For the filling
4 oz cream cheese
2 tablespoons splenda
1 tub cool whip

blend together and put inside the pumpkin roll, roll it back up and there you have it... a holiday favorite that you can enjoy without feeling bad over it!

Biscuits (part 2)

Okay, so after you get the dough worked up good... Like the end of the last post stated, you need to wash your hands, then sprinkle a little flour on to the dough ball and a little onto your hands. Now put your hand under the dough ball a little and give it a little flop.. rotate bowl a little, do this over and over until you have the dough coated well with flour and it has a good consistancy to it. Like the ball I got in the pic below.



Now pinch ya off a little ball of the dough and roll it up like a golf ball and then place in pan, and take your first three fingers and push it down a little.. If you look close at my pic you can see I pushed them down a little. Now take your finger and put a small well in each biscuit, and place small dollop of butter in each well.



Place in oven and bake for 10-15 minutes at about 425-450 based on how your oven bakes... take out when toothpick comes out clean. Now brush a little melted butter on top, put stove on broil and stick back in to get the tops nice and brown. Voila you just made biscuits.



Homemade Buttermilk Biscuits(part 1)

I am going to have to do two posts for this, because it won't allow me to upload all the pics needed to one post. so heres the first part.

Okay so I do not normally use a recipe for these, they are just kinda hit and miss, once you get it down to pat, you wont need a recipe, but to start it out for my friend that requested the recipe here ya go...


Okay First off get a cake pan a grease it with shortening.
I take about 5 cups of flour and put it in a big bowl... now hollow out the center of it, like your making a well in it... leave a little flour on the bottom of the bowl, but make a hole in the center of your flour.










Now take about one good size serving spoon and scoop ya up some shortening and put in the hole in the flour.









Now your going to slowly start adding in a little bit of buttermilk into the same hole as the shortening. just a little at first (also if you dont have butter milk, no big deal, use regular milk, cream, or just water ) you want to work your milk in with your shortening for a little while, then slowly start pulling in some flour from the sides and work it in with the milk/shortening mixture. Do not get it to stiff, you want it to stay sticky. Keep pulling flour in and working it, and then adding ya a little more water or milk until you get a good size ball of dough.

Chocolate Gravy (2) Never made this one

2 cups sugar
4 tbs cocoa
1 pinch salt
1 2/3 cups milk
1 tsp vanilla
2 tbs butter

In a skillet put sugar, cocoa, flour and salt. Add to that milk, vanilla and butter. Cook and stir until boils. Let cook a little to allow to thicken more. Serve over biscuits. (also if either one dont get to the thickness you want, mix up some corn startch and water... bought 1 tbs of each, and pour in it.. make sure the gravy is boiling when ya do this though, so it will thicken... otherwise it just clumps up). Hope you enjoy this girl!!

Chocolate Gravy (for my Dear Friend Robin)

Ingredients
3 tsp cocoa
2 tsp flour
2 cups milk
2 tbs butter
2 tsp vanilla
1 cup sugar

Mix Cocoa, Sugar, Flour together, then add milk, mix until smooth. Heat and stir until thick. Take off heat, add butter and vanilla.


Note: My sis substitutes 1/2 cup sugar for 1/2 cup splenda and then does the other 1/2 cup with the sugar, so that it takes away some of the sugar content. This is the recipe we use here, but I have another one also I am going to post for you, but I have never made the other one.

Freaky/Scary cake thingy I got going on right now


Okay, so my sis sends me down a "starter" for a friendship cake. And me being the frugal person I am could not throw it out, even though I do not really like messing with these sort of things. So I start doing it.


It takes 30 days, 7 1/2 cups of sugar (no splenda sub for this one which makes it something we wont eat)

1 32 oz. can of each of these fruits. pineapples, peaches, fruit cocktail

1 jar maraschino cherries

now you add a can of each of the fruits every 10 days, peaches on the first day you get it, then the pineapples then the fruit cocktail and the cherries. along with that you also add 2 1/2 cups sugar every 10 days.


This mess is mixed up in a glass gallon jar (didn't have one so I used two half gallon Mason Jars)

Left to set out on the counter top for 30 days straight to do its thing. Scary


after you let it set out and make what smells like a nasty whisky, you drain the juice off, divide it in 3 parts 1 1/2 cups each, and give it to some other poor unsuspecting soul.


then you take the fruit, and add 1/3 cup of it to 1 box of yellow cake mix, 2/3 cups veg. oil. 4 large eggs, 1 pack vanilla instant pudding, 1 c. coconut, 1 c. chopped pecans.


do this 3 times, cause this crap makes three of these cakes.


bake it for 50-60 minutes in a 350 degree oven.


This cake scares me to death. Not to mention it has enough sugar and calories in it to drop a cow... it has set out for 30 days and just what I would say, rotted... yuck. I got it working, in the jars, and will make the cake, and take it to church dinners, or give it to family, but Myself or my husband will not be eating any of it, because he is a diabetic, we are trying to diet, and I am not sure I can get over the fact that it set out for an entire month, without being put in the fridge. Anyway, thought I would show you all a pic of it, cause it was bubbling this morning, and kinda made me uneasy.


My mom has ate a piece of one of the cakes already and says its good, but my mom would eat dirt with a little salt... love her heart she has no taste buds, so I can not honestly trust her opinion on it.

What kinda cook are you?

I often wonder, how do other people cook.. are they like me and can cook the normal stuff without recipes, and then the stuff they make, but not often, have to have recipes for.

I can cook my mac and cheese, potatoes, gravy, biscuits and such without a recipe at all... just throw it together, no biggie..but when it comes to my pies and cakes, my meatballs, anything "special" I best have the recipe handy. Not to tell me what to do with it, just what goes in it, I can remember how to put it all together, just not what to put in to put it together.. So my question to you is this...

Can you look at a recipe once, use it, tweek it, and then make the stuff over and over without the recipe?

Can you create awesome meals outta your head just from stuff in the cubbord?

Can you cook the old fashion stuff that people pay big money at The Cracker Barrel to get?

Just courious since most of my friends are all from or have lived in East Tennessee, just wonder how they are in the kitchen.

Homemade Beef Stew

3-4 pds stew meat
3-5 Beef Bouillion Cubes
4-5 large potatoes peeled and cubed
2 cans carrots (or half a bag baby carrots)
1 small onion diced (I use onion powder cause Bryan wont eat it if he "sees" onions)
Water
salt and pepper
worchestire sauce

Put stew meat in crock pot early that morning. Fill pot with water and allow to cook on high all day. In the afternoon, add in the salt and pepper, and the worchestire sauce and the bouillon cubes.

About 2 hours before serving add in the vegetables, and if you want a little thicker soup, mix up some corn starch and water to thicken.
That's all there is to it, and its a nice warm hearty meal that's easy!!

Simple Meat Loaf

2 pds ground beef

1 can tomato paste

1 onion chopped

1-1 1/2 cups oatmeal

2 eggs

salt and pepper



My husband is a picky eater, and he loves this!





Mix the ground beef, egg, onion, oatmeal, tomato paste, salt and pepper together in a big bowl. If you do not have enough Oatmeal in it to dry it up , add a little more, as thats the key to a perfect meatloaf, have enough bread in it to draw up the oil out of it, and allow it to stick together.



Once the meatloaf is nearly done, pull out and put your ketchup on top and put back in for another 20-30 minutes. I bake this in a 300 degree oven for a couple hours, or until the meat is cooked. I decided its better to be cooking for a couple hours, and have a delicious meal, than to cook for 20 minutes, and throw it out, so I cook things slow to get a better flavor.

Beef Manhatten's

You will need one good size roast. Doesnt matter what cut it is, I use any I got in the freezer, cause if you cook it right, its going to be nice and tender anyway.

Place the roast in a crock pot, along with some Worchestershire sauce, soy sauce, salt and pepper. Cover with water, and for an even better tasting gravy, go ahead and throw in a couple beef boillion cubes to get that really beefy taste.

Just cover it and let it cook. No big secret here, just patience with it. Let it cook until it falls completly apart when you touch it with a fork. Take the meat out of the juice, and shred the meat up with a fork. and set aside.

Now pour the juice into a pot and bring it to a boil. Once its boiling good, mix you up some cornstarch and water, about 3 tablespoons corn starch to 1/4 cup water, and pour it over into the juice, along with a dash of Kitchen Bouquet. This flavors your juice, and makes your gravy nice and brown. Salt and pepper to taste.

Now, take two pieces of white bread and lay on a plate. Spoon some of the roast on the bread, then a little gravy, and then put the other piece of bread on top and smother with the gravy.

I serve this with Mashed Potatoes and green beans usually. One of my and my families favorite meals!!

Slow Cooked Pinto Beans

I have been informed that not everyone cooks their own beans. I have always made my own pot of pinto beans with my fresh made corn bread and fried potatoes, so I couldnt believe this but I guess its true. So here is how to do it.

Wash you a pd bag of beans. Make sure you get all the rocks out (yes fresh beans that dont come canned do have rocks in them from time to time.)

Put your beans over in a good crock pot... you need one that gets hot enough to boil these, you dont want the soup to taste yucky.

Put about 2 tablespoons shortening in the beans along with water to fill it up to the top. Salt and pepper, and be giving with the seasoning, if you dont the beans are not going to taste good.

Cover and let cook for a few hours, make sure you keep them filled with water, or they will burn.

Once they start boiling good, and you see the soup has turned brown, and the beans have swelled all the way up, uncover them, and let them cook like that. That makes your soup get nice and thick, and gives the beans a much better flavor. Be attentive to them, keep them stired up good, so they get thick.
Serve with corn bread ( I have a recipe for this on here) and fried potatoes and maybe even some kraut and weiners. Yummy good, straight from the south supper. Hope you enjoy these!!

Fresh (frozen) okra

Ever put up fresh okra out of the garden? If so then you know how yucky it normally tastes when you try to cook it. Well I got a secret that a sister of one of the little down syndrome guys I use to take care of told me about. Its awesome.

Okay, so first off, freeze the okra whole. Just wash it and throw it in the bag, dont cut anything off.

Now when you go to cook it, cut it up frozen, and crack you an egg over it along with a tad of milk. Not much, just what you would use to coat it with anyway. Allow it to thaw in the bowl, with the egg and milk mixture in it. Mix you up some flour/cornmeal/salt and pepper mix, and set aside. Get your deep fryer going, and have that oil hot, about 400-450 degrees hot.

Now, take the cut okra out by a handful at a time, bread in your flour mixture, and then drop in the fryer. The breading sticks.. the okra gets soft just like it is straight out of the garden. My husband loves this stuff. Just wanted to share it with you.

Broccoli Pasta Salad

Do any of you guys remember Mrs. Winners?? Well I do, I use to work there in high school, and I just loved their pasta salad. I also use to make the stuff and still remember the recipe. So here ya go.


1 bag of the colorful twisted noodles ( I do not remember the name of these, but you will see what I am meaning when you get in the store, lol)

1 head broccoli

2-3 stalks celery

1 carrot shredded

1 bottle ranch dressing


Okay, so cook your noodles, and then let them cool. While they are cooling, cut up your broccoli and celery. All you use of the broccoli is the heads, throw the stalk away. Put this stuff in a bowl along with the shredded carrot. Pour your noodles in the bowl, and then pour your ranch dressing over it, and mix it up. Do not use expensive salad dressing on this, you can not tell the difference in the salad, and it take alot, so use whats on sale ( and remember buy them with coupons!!)

Watergate Salad

My dear friend Shanna Joe's granny use to make this for us all the time when she was living. She was a wonderful cook, and I miss her very much.

you will need

walnuts
1 can pinapple chunks
4 boxes pistashio pudding
1 bag colored baby marshmellows
1 tub cool whip
marishino cherries ( not sure if thats spelled right, but you get the point)

Make the pudding as directed, and then mix the cool whip in with it. Next put all the other stuff in and chill. Thats it. all there is to it. Use as many walnuts and cherries as you like. I like alot in mine, so I use alot, but thats totally up to you. This recipe is near and dear to my heart... it was a comfort food she made us to show us she loved us.. Hope you enjoy

Fruit Cobblers

This is my mothers recipe for easy fruit cobblers.


1 cup flour
1cup sugar
1 cup milk
fruit of choice


put your fruit in the bottom of a round pyrex dish, and then mix the other ingredients up, and pour them over the top of the fruit. Thats all there is to it. I sprinkle a little sugar on top of mine when it starts to form a bread to make it more shinny, but not needed for taste. Serve with a big scoop of vanilla icecream.. Totally easy, and yummy

Better than Sex cake

1 devils food cake mix
1 tub cool whip
1 container chocolate fudge ice cream topping
1 container caramel ice cream topping
3 butterfinger candy bars, crushed
1 can eagles brand sweetened condensed milk

Okay, so bake the cake as directed, then take a knife and slit holes in it. pull those holes open a little and pour the sweetened condensed milk, chocolate and caramel down in them, and then cover cake with cool whip, and then sprinkle the candy bar pieces over it. Yummy

Lloyd Family Banana pudding

Why is this the "Lloyd" family recipe you ask? Well, because thats my maiden name, and my Aunt Linda has made this for years, and it rocks thats why!

1 block cream cheese
1 tub cool whip
4 boxes instant vanilla pudding
1 box cookies
banana's


make pudding as normal. Blend cream cheese and cool whip together until there are no clumps left. Then mix the two together, and put together just like you would put a regular banana pudding together.. The cream cheese and cool whip make it sooo much better, and of course more fattening, but hey.. if you know my Lloyd clan, you can see by looking at us, we all can cook.. lol

Stampers Hashbrown skillet meal

Okay, so one day I was short on pantry supplies, and short on money, so I decided to become creative with what I had, and this ended up being a really good meal.

2-3 med size potatoes
1 pds ground beef
1 pck onion soup mix
powdered cheese from a mac and cheese dinner
1 can mushrooms
4 slices cheese


okay so first brown your hamburger meat, then mix in the onion soup mix with just a little water, then shred the potatoes up, and put them in the skillet with the meat, and mix all that together. and let the potatoes brown good. Once the potatoes are done and brown, mix that cheese up with a little milk and pour over the top of the casserole and then place the 4 slices of cheese on and let all that melt in. A good hearty meal, (maybe not healthy, but is tasty) and feed alot for just a little.

Bubby Brine's Queso Dip

This is a super easy recipe, and you can find it on the back of the Velvetta box but we make it alot, and alter the recipe just a tad.

1 block velvetta cheese
1 can rotel (we use hot, if you have a sensitive tongue, use mild)
1 roll sausage
1 pd hamburger

Cook meat together on stove, then put the meat, rotel, and cheese in a crock pot and allow to melt together. Thats all there is to it, and everytime I make this its gone almost immediatly. My brother created this little recipe, and the whole family loves it!

Homemade Totilla chips

You need a deep fryer for this recipe.

Take a pack of corn tortillas and cut in quarters.
Heat oil in deep fryer to about 400 degrees
make sure oil is hot, then drop totillas in oil. allow to fry until they get a golden brown (if you do not fry long enough they will taste stail)
take out of oil, put in plate with paper towel to catch excess oil, and lightly salt. Perfect as an addition to my open face Enchilada recipe on here!

Sausage cream cheese rolls

I was setting here today thinking about all the cream cheese I have frozen in my freezer that I got on sale back around thanksgiving that I need to use, and I remembered these totally yummy cream cheese and sausage rolls I make that are just to tasty to be true.

Okay so you need

1 block cream cheese
1 roll sausage (I always use the extra sage kind, cause my bunch loves the sage)
2 rolls crescent rolls

Fry the sausage up, then cut the cream cheese up and put in the pan with the sausage, and mix around till it melts.

Now take the crescent rolls and lay them in the pan flat. Put one good spoon full (i use a heaping teaspoon) in each one, then flop the ends up around it. Its probably not gonna cover all the meat, but thats okay.

Place in oven and allow to bake for 10-12 minutes or until the crescent rolls are done. Bake on temp recommended on back of crescent rolls.

Easy appetizer, and totally awesome taste.

Swedish Meatballs


Okay, so my wonderful Mommy in Law Debbie gave me this recipe today, and I have not ever made these, but they turned out wonderful, were super easy.. and my owe my the taste. Mmm mmmm



Ingredients


For Meatballs

2+pds ground beef

1 tbsp garlic powder

1 tbsp onion powder

salt and pepper (put however much you like in your food)

1 sleeve of saltine crackers, Crumbled


Sauce

5-6 beef bouillon cubes

3-4 cups water

salt and pepper to taste

corn starch mixed with water to thicken(use a couple heaping teaspoons full with about 1/4 cup water to begin with, and mix together, then if you need more to get the gravy thicker, repeat and make more)


Okay, so you put all the ingredients for the meatballs in a big bowl, and mix it all together like you would a meatloaf. Then roll into small balls, about the size of a golf ball, and put in a skillet with just a little pam or oil to cook them in. Keep the heat low, as you are just browning the outside.

While these are browning, go ahead and get the sauce going

Put the water in a pan and bring to boil. add in your boillion cubes, and the seasoning. once all the cubes have dissolved, put your cornstarch water in, and make sure you are stirring the sauce, it will thicken.

Now, pour the gravy over top of your meatballs, and turn down to low and cover. Allow these to simmer for 20-30 minutes until the meatballs ar cooked all the way.

Next you need to put on water for your egg noodles. Boil the egg noodles just to where they get a little soft, but not done. Drain them and then transfer them over to the meatball and gravy mixture. Allow to cook until the meatballs and noodles are done. Thats all there is to it, and its a wonderful meal, and its Cheap!! I served this with green beans canned fresh from the garden, and mashed pototoes. Hope you enjoy this recipe and the pic.

Chicken Quesadillas

4 boneless skinless chicken breasts cubed
4 large flour tortilla's
butter
shredded cheese
salt
pepper
chili powder
garlic powder

cook chicken in butter and spices (just sprinkle a little of each on meat) until done, then butter one tortilla and place it butter side down on a cookie sheet. Top tortilla with the chicken then cheese, and now butter the other tortilla and place ontop of chicken and cheese with butter side facing up. Bake in a 425 degree oven until the tortilla is starting to brown and cheese is melted

Bryan'sOpen faced Enchiladas

Ingredients

1 large can enchilada sauce
8 corn tortilla's
2 pds ground beef
Shredded cheese

cook hamburger meat on stovetop until done. drain and mix in sauce. Now, dip the tortilla's in a little oil, and then place down on a plate, one at a time, covering each layer with meat and cheese, until you have a 4 layer enchilada.. top with cheese, and bake in a 400 degree oven until nice and bubbly. **Make sure you have oven safe plates for this recipe!***

Homemade Corn Bread

2 cups corn meal mix
1/2 cup flour self rising
2 eggs
buttermilk

Get you an Iron skillet for this.

Preheat oven to 425. Mix all ingredients together about , just add enough buttermilk to make it a liquid dough. Not watery, but not thick either. Put your Iron skillet on a stove eye set to med-high. Put a small amount of oil in pan, and then pour your mixture in the pan. Leave it on the eye a few minutes until you see it bubble.. like the way pancakes bubble before you flip them. Take off stove eye and place in oven. Now this is for a very small pan of corn bread, so if you are feeding a big family, use a bigger pan, and double the recipe. You are going to want to bake it until you can put a toothpick in center and it comes out clean. Thats all there is to it, yummy, hot corn bread served with butter.. MMM good

Homemade Mac and Cheese

This is my husband's grandma Nadines recipe. you will see alot of her recipes here, she is a wonderful cook!!


Ingredients

1 large box mac noodles..
1/2 block velvetta cubed
milk
butter
salt
pepper


cook noodles, and then drain. Cover almost to the top with milk, then put the velveeta cubes in and salt and pepper to your taste. Allow to set ontop of a very low heat burner until the cheese melts and the sauce gets thick.. Thats all there is to it.. Yummy

Aunt Wendy's Famous Baked Beans

Okay, so my niece begs me for these, so I am going to share my recipe secret.. lol

Ingredients

4 cans pork n beans
2 pds hamburger
1/2 cup or so of brown sugar
1/4 cup ketchup
1/4 cup mustard
1 Chopped onion
1 pd bacon, cooked and crumbled

Okay, so you need a slow cooker for this. Crock pot or something similar.

fry your hamburger meat with your onions and drain fat off. Set aside. Cook the bacon, drain, and crumble. Now put everything together into the crock pot, mix together well, and allow to warm up. I use the taste test for perfection with the brown sugar and the ketchup and mustard, so taste it and if you think it needs a little more, just add a little at a time till its perfect.

Easy Tuna Noodle Casserole

Ingredients

2 cans tuna in water, drained
1 bag egg noodles
2 cans cream of mushroom soup

Cook noodles, then drain. stir in soup and tuna, heat until warm.. and eat.. easy dinner and super easy!

Peanut butter pie

Ingredients


1 cup peanut butter
1 8oz tub cool whip
4 oz cream cheese
1 cup confectioners sugar
1 graham cracker pie crust


Mix the cream cheese and confectioners sugar together, until smooth. Add in the peanut butter and the cool whip. Pour into the pie crust and chill for 1-2 hours before serving.

pizza casserole

Ingredients
1 bag macaroni noodles
any pizza toppings you choose
2 jars spaghetti sauce
shredded mozzarella cheese
1 pd hamburger meat


Cook noodles until completly done. Cook hamburger meat, and then add that to the spaghetti sauce. mix sauce and noodles together, and place in bottom of deep dish. Add pizza toppings, then top with cheese and put in a 350 degree oven until nice and bubbly.

Pork chop and potato casserole

Ingredients

4-6 small chops
3-4 big potatoes peeled and sliced
1 can cream of mushroom soup
1 large onion chopped
1 cup shredded cheese


Cook pork chops in a 350 degree oven until done in large pyrex pan. place sliced pototoes, onions, cream of mushroom soup, salt and peper ontop of pork chops, and place back in oven. Bake @350 degrees until potatoes are tender.. take out and place shredded cheese on top, and broil until cheese is brown and bubbly.

Sweet potato casserole

Sweet potato casserole

1 (40 ounce) can cut sweet
potatoes, undrained
1 cup white sugar
2 eggs
1/3 cup butter
1/3 cup milk
1 teaspoon vanilla extract
1 cup packed brown sugar
1 cup chopped pecans
1/3 cup all-purpose flour
1/3 cup butter, melted
DIRECTIONS:
1.
Preheat oven to 350 degrees F (175 degrees C). Butter a 2 quart baking dish.
2.
Place the sweet potatoes and their liquid in a medium saucepan, and bring to a boil. Cook 15 minutes, or until tender. Remove from heat, drain, and mash.
3.
In a medium bowl, mix the mashed sweet potatoes, white sugar, eggs, 1/3 cup butter, milk, and vanilla extract. Spread evenly into the prepared baking dish.
4.
In a separate bowl, mix the brown sugar, chopped pecans, flour, and 1/3 cup melted butter. Sprinkle over the sweet potato mixture.
5.
Bake 35 minutes in the preheated oven, or until a knife inserted near the center comes out clean.

Made from scratch pie crusts

PIE CRUSTS

INGREDIENTS
2 CUPS FLOUR
¾ CUP CRISCO ( DOESN’T HAVE TO BE CRISCO BRAND SHORTENING JUST MAKE SURE IT’S THE HARD TYPE AND NOT THE PRESOFTENED TYPE)
1 TEASPOON SALT
5-7 TABLESPOONS WATER

DIRECTIONS

AFTER ITS COMBINED WELL, POUR OVER INTO PIE CRUST ( DO NOT BAKE CRUST BEFORE DOING THIS) AND PLACE PECANS ONTOP OF PIE. BAKE IN OVER AT 350 DEGREES FOR 1 TO 1 ½ HOURS OR UNTIL PIE ISNT GIGGLY INSIDE. TAKE OUT AND PLACE IN FRIDGE TO COOL.

*IN A SMALL MIXING BOWL COMBINE EGG YOLKS AND MILK TOGETHER AND SET ASIDE.
*NOW MIX CORN STARCH AND SALT TOGETHER IN YOUR POT YOU ARE USING TO COOK IT ALL IN. ALSO ADD SUGAR IN AT THIS POINT.

ORANGE SLICE CAKE

AUNT RUTH'S ORANGE SLICE CAKE

2 sticks (8 ounces) margarine
4 eggs
16 ounces orange slice candy
4 cups all-purpose flour
1 small can (3 1/2 ounces) coconut
1 teaspoon baking soda
2 cups sugar
1 1/2 cups buttermilk
pinch salt
1 cup chopped pecans or walnuts
16 ounces chopped dates

Glaze:
1 cup orange juice
1 cup sugar
PREPARATION:
Preheat oven to 250°. Melt margarine and let cool. Cream sugar and cooled margarine. Add 1 egg at a time and beat well. Add buttermilk, soda, flour and salt to the mixture and beat. Add chopped dates, coconut, nuts and candy. Bake in greased and floured tube pan for 2 1/2 hours.
Glaze: Mix 1 cup orange juice and 1 cup sugar and pour over cake while cake is hot.

Chocolate Buttercream Frosting


1/2 cup butter, room temperature
1/2 cup unsweetened cocoa powder
2-3 cups powdered sugar
1/4 cup milk
1 tsp vanilla extract

Combine all ingredients in a large bowl and beat, with an electric mixer, until frosting is creamy, 3-5 minutes. Add additional powdered sugar as needed to achieve a thick, but not stiff, frosting that is easy to spread. Add additional milk, if necessary, to thin the frosting if it gets too thick
